A summertime favorite, Gazpacho, is one of the few items I really love to make. I try it whenever I eat out or travel as its variations are numerous. I make a simple rustic version heavy on EVOO and basil. Part of the fun for me is the setting of the table and what sort of fun summertime way I can find to serve it. Enjoy!
